The Old Cheese Room Lypiatt Cheese 120g
This is our famous, fresh, charcoaled Chevre-like, mould ripened cheese. You'll get a nice chun, on average 130g each. Ash rind, slightly citrussy, and has our classic buttery quality courtesy of our Jersey herd.
You will see wrinkly geo growing over the black charcoal coating turning into grey in colour - part of maturation. It is good to keep it in the fridge wrapped in its packaging.
This was one of the famous 'lockdown cheeses' features on the BBC's Saturday Kitchen on 1st May 2021 here. "Cook with it- do anything with it." It went down extremely well and was termed 'a good, giant, Baby Bel!'.
Bring it up to room temperature before serving. Generally speaking it has a month shelf life.
