Breramilano Panettone with Apricot 1000g

Our panettone is processed for 72 hours in which the most important phase is the refreshing of a yeast that is always kept alive. By working it with flour and water we ensure that it remains reactive, giving softness and flavor to the product. For this particular leavened product, apricots cut in half are used and they are all melted at a low temperature. The result is that the piece of apricot becomes so soft that it seems like a real jam to the palate.
