Crema di Olive' is prepared with pickled olives, extra virgin olive oil and salt. The olives used are the 'Taggiasche', a quality typically Ligurian, from the Western Riviera. Plants that give this type of olive are century year old and were planted by the monks on the terraces overlooking the sea. A very delicate taste and an intense dark color characterize this olive cream. An ideal condiment for the preparation of toasts or canapes, may also be used as a base for pasta, spread directly onto bread or heated as a sauce, besides, it is an excellent dressing for salads or salted cakes.
